SWEET POTATO, TOMATO & AVOCADO SALAD

Sweet potato salad

Ingredients:
– 2 medium sweet potatoes
1 avocado
200 g tomatoes
3 sweet peppers
1 red onion
3 tablespoons olive oil
Salt and pepper
A few leaves of fresh coriander or parsley

1. **Preparing the sweet potatoes**:
– Peel the sweet potatoes and cut into 1 cm cubes.
– Steam or boil the diced sweet potatoes in salted water for about 10-15 minutes, until tender but still firm. Drain and leave to cool.

2. **Prepare remaining ingredients**:
– Halve the avocados, remove the stone, then peel and dice the flesh.
– Dice the tomatoes
– Remove the seeds from the sweet pepper and cut into thin strips.
– If using a red onion, peel and slice thinly.

3. *Salad preparation**:
– In a large salad bowl, mix the cooled sweet potato cubes, avocado cubes, tomatoes, red onion and sweet pepper strips.

4 Seasoning and serving** :
– Pour the olive oil, salt and pepper over the salad and toss gently to coat all ingredients.
– Garnish with fresh coriander leaves or parsley.
– Serve chilled.
