I REVISIT... WEST INDIAN PUDDING
🥐🍞🥖 Pudding revisited with fried yellow banana 🍌because I don’t like raisins and prunes at all 🫣

A classic pudding recipe, I’m revisiting @tatiemaryse ‘s recipe (for 10 people) in an express version.
🥐400g stale bread and/or pastries
2-3 ripe yellow bananas
100g cane sugar
370 ml oat milk
2 tbsp. to s. old rum
50g butter ½ salt
1 egg
Classic oil or coconut oil
Zest of 1 lime
3 cac 4-spice powder
Contents of a clove of @vanillevolkanik
🍯 A gourmet salted butter caramel like this one with peanuts or those from @lesilesgourmandes
1) Fry 2 yellow bananas (slices or rounds as preferred) and set aside.
2) Blend all ingredients (except bananas and caramel)
3) Spread the caramel on the bottom of the dish or in small individual moulds (perfect for freezing).
4) Add half the mixture
5) Arrange the fried bananas on top of the mixture
6) Cover with the rest of the preparation
7) Cook in a bain-marie until the tip of the knife comes out clean, about 30 minutes at 180 degrees. Leave to rest for 10 minutes, then it’s ready! Unmould and enjoy! 😋
Bonus: boil your last yellow banana and mix it with a little vanilla and cinnamon, to make a little cream to enjoy with your pudding. It’ll add another texture 🔥.
