PINEAPPLE CONFIT WITH SPICES
Ingredients:
- 1 ripe fresh pineapple
- 100 g cane sugar
- Lime juice
- 1 cinnamon stick
- 1 cac 4-spice blend
- 1 star anise (star anise)
- 1 vanilla pod, split and scraped (or 1 teaspoon vanilla extract)

Preparing the pineapple :
- Peel the pineapple and remove the hard core. Cut into small cubes. Anti-waste tip: use the bark and core to make a flavored tea or broth by boiling them in water.
2. Placement of spices :
In a medium saucepan, combine the diced pineapple with the cane sugar, lime juice and spices (cinnamon, cloves, star anise and vanilla). The spices infuse during cooking to release their complex aromas.
3. Cooking :

- Cook the mixture over medium heat, stirring occasionally to prevent the sugar from burning and the fruit from sticking to the bottom of the pan.
- Simmer for about 25 minutes, or until the diced pineapple is tender and the mixture has a thick, syrupy consistency.
- Cooling and storage :
- Remove from heat and remove whole spices (cinnamon, cloves and star anise). Allow to cool to room temperature.
- Transfer the pineapple confit to a sterilized jar and seal tightly. Keep refrigerated.
To serve :
- This spicy pineapple confit is perfect served with plain yoghurt, as an accompaniment to pancakes or ice creams, or even as a garnish for meats such as pork or chicken.
Serving suggestion:
For a visually appealing effect, serve the confit in a small glass jar at brunch, or add it to a cheese platter for a touch of exotic sweetness.
